This Dry/Natural Processed Ethiopia is a Farm Gate lot of grade 1 Ethiopia landrace coffees (what we used to call “heirloom varietals”). The lower acidity and super smooth and clean finish make this one a coffee to have a few cups of.

"Coming from farmer Desalegn Hijo, whose 10 hectare coffee farm is located near Idido and Tulse villages, in Ethiopia's famed Yirga Cheffee region. Desalegn Hijo processes his coffee at the farm, drying it on raised, wood-frame drying beds. Being that the dry process method involves drying the whole coffee cherry, it takes a lot longer to reach the required 10% moisture than wet process coffee. The average dry time at Desalegn's farm is around 2 weeks, during which he and his family turn the coffee to facilitate even drying, as well as remove any physical defects and under/over ripe coffee that they find. The drying coffee is covered mid-day to protect from the hot sun, and then again in the evening for cover from the misty, or even rainy evenings (it is the Misty Valley after all!). The farm altitude is very high, between 2000 and 2100 meters. High altitude slows maturation and increases coffee bean density, which correlates to higher probability of sweetness and acidity, and also can affect the size of the beans. You'll find small beans in this lot, the smallest being 14 screen (measured in 1/64 in.). The small bean size won't create an issue during roasting. You can expect a fair amount of chaff production since dry process coffees still have quite a bit of silver skin intact."
